Day 18: Waffles for Breakfast!

There is a small chain restaurant about a mile and a half away from our house, called Biscuits. They make amazing biscuits and gravy, chocolate chip pancakes, corned beef hash and a variety of other yummy and delicious, but not terribly healthy breakfasts.  Since it was nice and warm (before this week), we'd walk up to the restaurant with the dogs and eat out on their patio.  Three miles with breakfast makes the bad food a teensy bit better. 

Yesterday (yes, I'm a day late on this post), I got up early and took the dogs for a very fast three mile walk, which we all enjoyed.  Brian and I had been talking about Biscuits the day before, so we decided to drive up (without the dogs) and eat inside, where it was warm.  Of course, it is tough to eat at a place like that when you are on an 8-week challenge. But I figured, if I got a waffle with fresh fruit and skipped the syrup, it wouldn't be too bad.  Yes, I know that waffles have some sugar, milk and eggs in the batter, but not enough to stop me from eating them yesterday.  I also had some hash browns and eggs over easy.  I haven't been off the plan in a while and I was really hungry. It was pretty darned good, and not too much of a diversion from the challenge. 

Between breakfast and lunch, I applied for a couple of jobs. I have a love/hate relationship with the online job application process.  I love that you can upload your resume and it will auto-fill name, address, phone number, and work history. I hate that it gets confused by my formatting (I worked for Verizon Wireless for 20 years, with multiple job titles and descriptions) and I have to rebuild parts of it.  I also write a new cover letter and resume for each job, which is time consuming, but as a hiring manager, I always looked at the folks who wanted the job that I posted, not just any job. Sadly, it hasn't made a difference yet.  I'll keep on plugging along and hopefully, something will turn up soon.

For lunch the day before, we had an iron rich broccoli-potato soup with some Ciabatta  bread. Yesterday, it was PB&J with banana again.  I am sensing a comfort food theme for that damp, cold, job searching day. We made up for it at dinner, which was a ginger, black bean, broccoli pasta.  We had a similar dish years ago at California Pizza Kitchen (although theirs had chicken in it) and really liked it.  I think it needed some soy or teriyaki sauce to make the flavor right.  As it was, it was pretty good, but it definitely needed that extra something to make it taste like the one we remembered.

For dessert, I had a plum and later, some peanut butter pretzels. We watched Slum-Dog Millionaire (again); a very good film.  Then off to bed only to have my side of the bed completely hogged by the little dog. On the plus side, my jammies are too big now, as are several pairs of pants.  So no complaining from me!
